Editing can be a monotonous task. Kids spend a week planning and writing, and don't want to ready it again to check their sentence structure and revise. They rush and don't end up changing much...in my experience. So...on this day, I taught the students to share their writing on Google Docs with a peer, so that they can comment and make suggestions. What the kids loved about this way of editing, was that they could see what they had written AND what their peer suggests to change. All they have to do is click accept or deny. What they may not have realized is that they ending up editing twice for every email they sent, once on their peer's writing and once on their own, judging whether or not to make the changes that were suggested.
